Fresh winter salad…..a light at the end of the tunnel!

Fennel, Celery and Red Radish Salad
This is the best winter salad to make when you need a quick fix of what’s fresh and flavorful! This recipe makes enough for 2-4 people as a side salad.

1-2 roots of fennel with fronds
3-4 stalks celery
2-3 red radishes
Good aged Parmesan
Olive oil
Salt
Pepper
1 lemon

Using a mandolin, thinly slice the fennel and radishes; you can use the mandolin or a knife for the celery. Place in a bowl and then shave some of the Parmesan cheese over it; I like to use a vegetable peeler to do this. Add a generous pinch of salt and pepper, olive oil and the juice of one lemon, toss well to coat with your hands.
