I HALF expected tuna casserole.

With a mesclun salad to start — if I got lucky.

That’s not to say I don’t attribute extraordinary culinary prowess to my colleagues and dear friends Kim Severson and Julia Moskin, whose desks, I should point out, bracket my own, putting me in a sort of cubicle chokehold. We sit within what I only recently came to regard as slapping distance of one another.

But less than $8.50 a person for a full dinner? I didn’t see how this budget allowed for much strutting, not even from home cooks as gifted and resourceful as these two kitchen goddesses. Have I mentioned the office seating arrangement?

They took different approaches, reflecting different personalities. Kim’s meal was the brasher, spicier one. It shouted “fiesta,” tugging us south of the border and encouraging us to eat with our hands. It declared that no budget was too tight for an adventure — a bounteous one at that.

25duel_190This article reminded me to mention something VERY EXCITING! Joe and I will be offering a class in May called Gourmet Meals for 4, under $10….the recession menu!

There will be variety and flavor and the unexpected in the class. We pretty much eat this way every night so we though, why not teach a class that is in line with people’s economic spending habits these days? Keep your eyes open for when we set a date etc.
