The Dinner Belle- Vegetarian Delights!
The Dinner Belle is getting ready to ring again! Come join us for fun and food on June 10th for Vegetarian Delights from 5:00 to 8:00pm. If you don’t want to assemble it, I will do it for YOU. You may pick up one or more of the meals. Pick up is available on June 11th from 10:00 am to 1:00pm at In The Kitchen. Here’s the yummy menu:
· Ratatouille—Just like from the movie Ratatouille. Be Remy and assemble zucchini, summer squash and eggplant on a special sauce from Thomas Keller’s Ratatouille recipe.
· Ya Ya Gumbo—Get your Cajun Ya-Ya’s out!
· Lemon Ricotta Gouda Zucchini Raviolis with a garlic, basil sauce. A delicate and refreshing summer treat.
· Calzones—Pesto, artichoke, sun dried tomatoes and cheese. A favorite from the first class.
Each meal serves 4 and is $23 per meal. That’s $5.75 for a healthy meal that you cook in the comfort of your own home.
Also, you may pick up a dessert that has been specifically paired to these dinners from Nana’s Kitchen: a moist, 2 Layer Carrot Cake loaded with carrots and pineapple, spiced just right with cinnamon, nutmeg and ginger and frosted with cream cheese frosting.

Here’s a lovely yummy side dish recipe from last class that everyone loved!
Coconut Rice
The texture of this rice is moist and sticky, so do not expect fluffy individual grains.
¾ cup of well-stirred canned unsweetened coconut milk (or light coconut milk)
¼ cup water
½ teaspoon salt
½ cup long-grain white rice
Garnish sweetened flaked coconut, toasted
In a small saucepan, bring coconut milk, water and salt to a boil and stir in rice. Reduce heat to moderately low and simmer rice, covered, until most of the liquid is absorbed, about 15 minutes. Remove pan from heat and let rice stand, covered, about 5 minutes.
Serve rice sprinkled with coconut. Serves 2.

· Pasta Alfresco with Summer’s Bounty of Vegetables in a light marsala cream sauce
