Classes

Enjoy an evening of hands-on learning with In The Kitchen cooking classes. We emphasize the use of seasonal, local and organic produce. Our menus range from season-based fare, special vegetarian classes to basic skills classes. Kids classes typically are held in the afternoons, while adult classes are held in the mornings and evenings. Classes include a meal prepared by YOU, knife skills and bits of culinary wisdom.

At the end class, we sit down in the dinning salon and toast each other and our culinary efforts and enjoy a home-cooked meal!

Her focus on nutritionally dense food, lovingly prepared, is coupled with her philosophy that organic vegetables and fruits, grass-fed meat, sustainably caught wild fish, “pastured” poultry and dairy are the basic building blocks to optimum physical and mental health.

Let Joe Meade take you on a culinary and personal journey through India. He will regail you with stories as well as culinary wisdom as you prepare up to 9 traditional Indian dishes to share as a feast at the end of class! In this class you will make raita, seasonal fruit chutney, pakoras (fried Indian snack) several curried vegetables preps, chipatis (flat bread) and curd (fresh cheese). We will cook, sweat, laugh and then feast together In the Kitchen!

Traditional Handmade Tamales with Teresita Juarez Lyon

Learn the ancient art of tamale making using healthy ingredients to create this Latin specialty. Students will learn to make masa, fillings, and sauce, as well as receive instruction on the delicate skills involved in hand rolling and wrapping to prepare the tamales for steaming.

Basic Macrobiotic Cooking

Get started with macrobiotic cooking and eating. Migiwa Kawasaki, who makes the macrobiotic bento balanced meal boxes at BriarPatch, will teach how we can create sweet tastes from grains and vegetables that satisfy our cravings and give us vitality. Dishes will include brown rice, soup stock, miso soup, sesame salt, steamed green leaves, and kinipira burdock with carrot. Migiwa has completed the Macrobiotic Leadership program at the Kushi Institute, a nationally recognized center for natural healing in Massachusetts.

KIDS In The Kitchen Summer Camp!

Here is what makes In the Kitchen a unique camp experience!

Learn to shop for food and our Iron Chef Challenge: Weekly field trip to the local super market, SPD where students learn smart ways to shop and plan for meals. We will unveil a secret ingredient and the kids will then have the chance to create a dish around that item!

Cooking for Community: Students will experience the joy of cooking for others when they bake and package cookies, which are then delivered to the the Nevada County Food Bank.

Farm to Table Fridays: Parents are invited to join us for a field trip to a Living Lands Agrarian Farm for a picnic and day of discovery and play outside!

We pride our camp on not only offering fantastic cooking classes, but on teaching manners and etiquette as well. Learning to cook develops creativity, academic skills and teamwork and it’s a Whole Lot of Fun!

Home Canning and Preserving Workshop- Jams, Whole Fruits and Fruit Salsa

The bright jeweled tones of home made jams are something to behold! Taking the time to “put up” fruit in the height of the season is a great way to ensure sweetness year round.
We will start class with a talk on canning safety, sample some yummy local jams and then jump into making our own! We will discuss how to have a beautiful color and flavor without having to add too much sugar to your batch.
We will also preserve whole peeled apricot halves in a light syrup. Participants will take home a jar of their creations! Space is limited!

Lacto-Fermenting with In the Kitchen

Join us as we explore the amazing flavor and health benefits of lacto-fermenting! It is one of the easiest ways to preserve food, while maintaing and even adding nutritional bonuses! We will learn how to preserve food with lactic fermentation, a technique which requires neither canning or vinegar.
We will make sauerkraut, kimchi and dill pickles through the lacto-fermentation process. You will go home with goodies which will continue fermenting so you can experience the entire process. We will not be having a whole meal in class but there will be lots of sampling and snacks on hand. Space is limited.

Let’s be honest, the cocktails at a cocktail party are the easy part! It’s the food that most people fret over! Appetizers, Hors d’oeurves, tapas…..where to begin! Private Classes

In The Kitchen offers private classes for groups of 6 or more. Private classes are a great way to celebrate birthdays, bridal showers, team building events, or just getting friends together!

Cancellation Policy: If you need to cancel or reschedule your class, you may do so as long as this is up to 48 hours before the class. Students are requested to notify In The Kitchen via email with any cancellation requests. Please let us know the date and class title, and if you wish to receive a makeup for a future class, or a refund. If it is past the 48 hour mark and you find that you cannot attend, you will still receive the class recipes but your tuition/option to reschedule will be forfeit. Please note: You may always send someone in your place!
